Farmer's Market Slaw

My summer has resolved around this salad. It's easy to switch up if you should come across something inspiring at the market or if you just want to use up what you might have on hand.

Farmer's Market Slaw
Serves: 12

4 cups thinly sliced Swiss chard leaves
1/4 of a small head red cabbage, thinly sliced
2 medium beets, shredded
2 carrots, shredded
2 celery ribs, thinly sliced
2 cups sugar snap peas, thinly sliced on the bias
1 apple, shredded
1 cup walnuts
Dressing:
1/4 cup lemon juice
3 tablespoons olive oil
1 tablespoon honey
1 teaspoon sea salt
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes

Combine first seven ingredients. Whisk dressing ingredients; pour over salad and toss to coat. Cover and refrigerate until serving. Add walnuts just before serving.

- If your beets have nice greens on them, you can slice those up instead of using chard. Other throw-ins that are nice in this salad are a handful of cilantro, currants or thinly sliced dried apricots.
