A more every day version of my beloved Monster Cookie, this after school version is easily mixed up from pantry basics. Unless, you are able to keep M&M's in your pantry... In which case, you are a much, much better person than I am.
Peanut Butter Oatmeal Cookies
Makes: about 3-1/2 dozen
3/4 cup natural peanut butter
1/2 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup white whole-wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon Kosher salt
2 cups old-fashioned oats
Preheat oven to 350°. In a large bowl, cream the peanut butter, butter, and sugars until light and fluffy. Beat in eggs, one at a time. Mix in vanilla.
In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually mix into peanut butter mixture. Stir in oats. Using a cookie scoop, drop onto parchment paper-lined baking sheets. Flatten tops lightly using a fork.
Bake for 11-13 minutes or until lightly browned. Cool slightly before removing from pans to cooling racks to cool completely.
Note: If you do not have a cookie scoop, lightly roll tablespoonfuls of dough into balls and proceed as directed.
~ Charlotte advises to take two cookies and sandwich them with Nutella. That she says, is how to make a really good cookie...
I think the original sounds pretty yummy. I'm afraid the entire rest of my family would agree with Charlotte!
