Chocolate Chip Cookies

A cold, snowy evening left Charlotte wanting to bake a special treat for her dad's birthday. These cookies are perfectly soft, chewy, and delightful.


Chocolate Chip Cookies
Makes: about 3-1/2 dozen

1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2-1/2 cups white whole-wheat flour
1 teaspoon sea salt
3/4 teaspoon baking soda
1 cup milk chocolate chips
1 cup semisweet chocolate chips

In a large bowl, beat butter and sugars until light and fluffy. Beat in eggs, one at a time. Mix in vanilla. In another bowl, combine flour, salt and baking soda. Add to creamed mixture and mix just until blended. Stir in chocolate chips. Cover and refrigerate for a few hours (overnight).

Preheat oven to 375°. Using a cookie scoop, drop 2-in. apart onto parchment paper-lined baking sheets. Bake for 6-7 minutes or until lightly browned. Cool slightly before removing from pans to cooling racks to cool completely.
